Slow Cooker Pulled Chicken
Ingredients
- 2 Tsp Olive Oil
- 10 Medium Boneless Chicken Thighs
- 2 Medium Red Onions Halved
- 2 Small Garlic Cloves
- 2 Tsp Paprika
- 2 Tbsp Chipotle Paste
- 250 ml Passata
- 100 grams BBQ Sauce
- 1 Small Lime Juice
- 8 Medium Burger Buns
Instructions
- Heat the slow cooker to low and heat 1 tbsp oil in a pan. Brown the 10 Medium Boneless Chicken Thighs, transferring it to the slow cooker as you go. Add the remaining oil to the pan and fry the 2 Medium Red Onions for 5 mins, or until just softened, then stir in the 2 Small Garlic Cloves and 2 Tsp Paprikaand cook for another minute. Tip into the slow cooker, then swirl 100ml water around the pan and pour this in as well.2 Tsp Olive Oil, 10 Medium Boneless Chicken Thighs, 2 Small Garlic Cloves, 2 Tsp Paprika, 2 Tbsp Chipotle Paste
- Add the 2 Tbsp Chipotle Paste, 250 ml Passata, 100 grams BBQ Sauce, sugar and 1 Small Lime, then season and stir. Cover and cook for 6-8 hrs until the chicken is really tender. Using two forks, shred the chicken through the sauce. Serve in 8 Medium Burger Buns, taco shells, jacket potatoes or over rice, with coriander leaves, chillies and guacamole, if you like.250 ml Passata, 100 grams BBQ Sauce, 1 Small Lime, 8 Medium Burger Buns, 2 Medium Red Onions
